L’Agar Agar est issu de l’algue rouge Gracilaria verrucosa ou des algues rouges du genre Gelidium. Il fut découvert au XVIIème siècle par un japonais. Il est obtenu par une transformation des polysaccharides naturels via une extraction à l’eau à partir des algues.
